Origin of Mac’s Steak In The Rough

In 1949, Dave McCarty started the restaurant in Artesia, New Mexico, a drive-in to a take-out restaurant serving mainly inexpensive steak in the rough. They opened their first chain restaurant in Albuquerque in 1954, and expanded the company across the city. The franchise is currently owned by Fresquez Companies, they have successfully reawakened the franchise after it was reduced to a single restaurant. And they have maintained control of the Mac’s Steak In The Rough concept, service, and products. They currently run the franchise as a famous drive-in and take-out restaurant in Albuquerque on Menaul Blvd., and in 2015 expanded into being a food truck and as a dine-in and take-out restaurant at Latitudes, across from Intel, in Rio Rancho. The past and present expansions of Mac’s Steak In The Rough has made its logo, a cow sitting on a platter next to fries and dinner rolls, a symbol of New Mexican fast food alongside Blake’s Lotaburger’s logo.
